Mommy/Daughter lunch date...

Last week, I took Cayleigh to work with me. She loves "helping" me. She pours paper clips from one cup to another, uses massive quantities of sign here post it's, colors my paper box with highlighters, and makes pictures out of the magnets on my door. My office is always so colorful after she has visited. Pardon all of the grainy pics, I only brought my ipod. At work: I decided to step out early and take the opportunity to get some one on one time with her. Granted, I get alot of one on one time, but I'm driving, or doing laundry, or cooking dinner. This was chore free, pure enjoyment one on one time. We went to California Pizza Kitchen(heaven!) and chatted for a very long time, and headed to the cupcake shop nearby. OH. MY. GOODNESS! I will only tell you where it is if you promise to bring me back one :) At CPK, this was her, "mom, we are in a restaurant, I'm embarassed" look. If only she knew how many of those she will face in her lifetime :...

It's her first time with the ice cream truck. I'm not sure who was squealing down the street louder, Cayleigh or me! A tough choice... Her choice? Spongebob-loves him, though I'm not sure why since I don't let her watch that show-*ahem teenage aunts of hers??*

BBQ Chicken quesadilla

or more appropriately known as leftovers I had in my fridge, either name works. Why does a dinner that tastes so good when you make it one night, look so blah in your tupperware container as a leftover?? I'm really building this to make you wanna try it right??? Well it was scrumptious!! I made these tonight and was so inspired, decided to blog about it! Believe me, nobody was more surprised than me ;) Here is what I threw together: Ingredients: tortilla shells Leftover cooked chicken cut up BBQ sauce tomatoes onion fresh pineapple cut up cheddar cheese Saute onion and pineapple. Throw all ingredients onto tortilla shell and cook in pan. Once cooked, take the top of tortilla shell off and throw on some BBQ sauce! SO GOOD!! There is something about the saltiness of the chicken and cheese paired with the sweetness of the BBQ sauce and pineapple that goes so well together. I have a couple more food blogs up my sleeve, stay tuned!
