Carrot cake
As a thank you for taking such good care of us, Cayleigh and I decided to make Daddy a carrot cake. I'd never made one, but I love to cook. I mean really, how hard could a carrot cake be??? With a 4 year old.... Who is still not feeling 100%.... and wants to do EVERYTHING all by herself? I ask you this....have you ever shredded carrots before? We did have fun making the cake-it was the shredding that was hard. It was more, don't shred your knuckles than shredding carrots. Ingredients! She got the best part of doing it...she got to shred them until it got down to little carrot nubs and then got to laugh at me while I attempted to shred them and not shred flesh on my hands. My baking buddy :) Voila! This was the best carrot cake Matt or I have ever tasted-I don't like pineapple in my carrot cake and so this recipe was perfect.
