A camping we will go...

We went camping last weekend and to be truthful, I was as excited as Matt and Cayleigh. Sometimes you need to get completely aways from TV, Internet, and all of the distractions to be fully engaged with your family. Matt took the day off and the plan was to head to the campsite by noon. We almost didn't make it, due to some insane person with a death wish who stopped on the highway attmpting to merge. Sigh . We had a TERRIBLE day Friday. Cayleigh was AWFUL. She was in time out more than she was with us I think. Looking back, she didn't get a nap and she didn't want us to ignore her while we set up the camp so she just kept acting out. The only good note of the day were the steak kabobs and corn on the cob we made! SO GOOD! Saturday we set out to go fishing after breakfast, which was Cayleigh's first time. Meet the bane of my existence...

Let me start by saying I know I have an unhealthy fear of bugs. Admitting is the first step to recovery, right? I know I owe you a camping trip post, but I just had to do this post while it was still fresh. I have been terrified of bugs since I was a kid. Ask my mom, I was that kid running frantically from a bee and making a scene. I was that kid who once hairsprayed a spider to my sheets on my bed and had to throw them out. Get the point? Just doing a photobucket search for 'stinkbug' made my skin crawl. Onto my story. I was driving home yesterday and on the phone with Matt, rambling about something when I looked in my rear view mirror and spotted a *gasp* stinkbug on it. Yes, that's right, less than a foot from my eyeballs. I shrieked and started ranting to Matt. "What am I going to do??? I can't drive like this!!!!" I'll spare you Matt's reaction, but it had something to do with driving to the hospital and checking myself in. He suggests I open the ...

Goulash...my version anyway

As I eat this leftover for lunch, I've decided to post about it because I go through ruts of not knowing what to eat for dinner and I'll pop on here to see if anything is enticing...This is a very plain dish, but hearty, healthy, easy and one that Cayleigh enjoys. It isn't something that will knock your socks off with flavor, but it's great because I always have these ingredients on hand- so for that, here goes! white rice-I use 4 cups for leftovers(next time I will try brown) a bag of frozen broccoli can of corn, drained 1lb chicken tenderloins 2 cans healthy request cream of chicken soup Prepare rice as directed. Prepare broccoli as directed. Set aside. Cook chicken until pink is gone-season as you wish. Cut chicken into bite size pieces and put back into pan. Add rice. Drain broccoli and toss in. Add can of corn. Add cream of chicken soup, followed by one can of water. Simmer and stir occasionally 20 minutes. I usually add alot of pepper to this dish, and a bit of ga...
