Snowtober???

A little late in the news, but so historic I need to blog about it! We had snow in October this year, and not just a dusting either! It was awesome, aside from the fact I had to frantically run out and get snow pants, put her in her coat from last year because it was almost 70 a couple days before it snowed and I couldn't decide on which coat to buy her, and shove her feet into rain boots that were a size too small-hey, we do the best we can. A little quick snap action as my kid decided I should be the snow ball target. Not a great picture, but wanted to show how much we snow we got! This was midday-I think we had 4-5 inches by the day's end.

Baked Potato Soup

I've been meaning to post this recipe forever...It is one of my favorite, yet not the healthiest recipes. It is great though when snow is in the forecast like been it's in ours. It warms the soul. I usually double the recipe, as it gets better as it sits. Thanks allrecipes ! Ingredients 3 bacon strips, diced 1 small onion, chopped 1 clove garlic, minced 3 tablespoons all-purpose flour 1 teaspoon salt 1 teaspoon dried basil- didn't use 1/2 teaspoon pepper 3 cups chicken broth 2 large baked potatoes, peeled and cubed 1 cup half-and-half cream 1/2 teaspoon hot pepper sauce- didn't use Shredded Cheddar cheese I added celery and next time will add carrots and maybe corn Minced fresh parsley Directions In a large saucepan, cook bacon until crisp. Drain, reserving 1 tablespoon drippings. Set bacon aside. Saute onion and garlic in the drippings until tender. Stir in flour, salt, basil and pepper; mix well. Gradually add broth.
