Breakfast casserole

ok, ok, last post of recipes I promise!! I just want to post them, if for no other reason than it is so easy to find on here versus forgetting where I found this!! Only changes I made was I used potatoes o brian in place of the potatoes... Ingredients 6 baking potatoes 1 pound ground pork sausage 2 tablespoons butter 1 onion, sliced 2 teaspoons seasoning salt 1 cup shredded Cheddar cheese 12 eggs, lightly beaten salt and pepper to taste Directions Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish. Prick potatoes with a fork, place on a medium baking sheet, and bake 30 minutes, or until tender but firm. Remove from heat, cool, peel, and cube. Cook and stir sausage in a medium saucepan over medium heat until evenly browned; drain. Melt butter in a large saucepan over medium heat. Stir potatoes and onion into saucepan, and cook until potatoes are browned and onion is tender, about 10 minutes. Sprinkle with seasoning salt. Place potato mixture in the prepar...

Slow cooker Sausage with sauce

Now by this post and the last, it would seem we eat alot of pork. This is SO not the case! Made this with leftover sausage I bought to make meatballs a while back and had frozen..Just plain sausage, canned tomato sauce an onion and a green pepper and voila! It is super tender and so easy! The only bad thing was I put it in my crockpot this morning and it died on me! Made a quick run to Sam's club and we are back in business!!! Only changes I made was I sauteed the links for 10 minutes to get some of the grease out before putting it in the crockpot. Place the Italian sausage links, spaghetti sauce, green pepper and onion into a slow cooker. Stir to coat everything in sauce. Cover, and cook on Low for 6 hours. Serve on hoagie rolls, or over rice. 8 (4 ounce) links fresh Italian sausage 1 (26 ounce) jar spaghetti sauce 1 green bell pepper, seeded and sliced into strips 1 onion, sliced

Sausage dip...

I promise to post a blog about our fun new year's but because I'm too lazy to upload and fix pics, I'll do some recipes I've tried lately.... First up Sausage dip! Now I have had this recipe for over a year, and it never struck me as something to try...It is A-MAZ-ING!!! Super easy and super tasty! Sausage Dip 1 Pkg of Sausage 1 8 oz of Cream Cheese 1 can of Ro-Tel Cook the sausage in a frying pan until brown Add cream cheese and Ro-Tel Mix all together - serve hot Serve with french bread! Let me know if you make any of these and what you think!

I've been off all week(yay!) so I took this opportunity to give potty training a go around. Things are going pretty well, we've been pretty steady with 2-3 accidents a day, which I don't think is too bad considering we've been out alot the past week. I'm trying to take a relaxed appraoach about it, and let her guide a bit, we'll see. Also got together with a friend for a play date, and took the time to get this house cleaned!! Tonight we are supposed to have Summer and Melissa over for a new year's eve sleepover, but we woke up to a nice surprise-3 inches of snow. That's all for now, will post after new year's!! This is all I've got on my camera, can you believe it?

Fun with family...

We visited with Sam and Linda on Sunday and a really nice time. Cayleigh had presents to open and got some really nice stuff in addition to a surprise she will have from them shortly after the new year. She always has a great time at their house, going on hunt's with her "uncle dam" for cats(whose tails she pulls) and feeding her "aunt yinda's" fishies. She also enjoys all the treats she gets at their house!! This picture cracks me up! She loves those fish! Thanks for everything!!
