One word-AMAZING! I found these on pinterest and these were everything I ever wanted in a brownie and then some! We had these for mother's day and though it was alot of work, but totally worth it! They make alot and are very rich, but you can freeze them in indiviual servings, which make them even better if you ask me-the gift that keeps on giving! Vegetable beef soup

I had some leftover Chuck Roast, and a craving for some soup the other day so I decided to talk to my best friend, google and he told me about this gem of a recipe. :) Little did I know that I was about to get sick and live off this soup for the next week. Carrot cake

As a thank you for taking such good care of us, Cayleigh and I decided to make Daddy a carrot cake. I'd never made one, but I love to cook. I mean really, how hard could a carrot cake be??? With a 4 year old.... Who is still not feeling 100%.... and wants to do EVERYTHING all by herself? I ask you this....have you ever shredded carrots before? We did have fun making the cake-it was the shredding that was hard. It was more, don't shred your knuckles than shredding carrots. Ingredients! She got the best part of doing it...she got to shred them until it got down to little carrot nubs and then got to laugh at me while I attempted to shred them and not shred flesh on my hands. I've been meaning to post this recipe forever...It is one of my favorite, yet not the healthiest recipes. It is great though when snow is in the forecast like been it's in ours. It warms the soul. I usually double the recipe, as it gets better as it sits. Thanks allrecipes ! Ingredients 3 bacon strips, diced 1 small onion, chopped 1 clove garlic, minced 3 tablespoons all-purpose flour 1 teaspoon salt 1 teaspoon dried basil- didn't use 1/2 teaspoon pepper 3 cups chicken broth 2 large baked potatoes, peeled and cubed 1 cup half-and-half cream 1/2 teaspoon hot pepper sauce- didn't use Shredded Cheddar cheese I added celery and next time will add carrots and maybe corn Minced fresh parsley Directions In a large saucepan, cook bacon until crisp. This recipe is SO good! Truth be told, my kid wasn't a fan, but she did eat the green out of the shells, just hates ricotta. Simple Spinach and Ricotta Stuffed Shells Serves 4 to 6 Ingredients: 25 jumbo pasta shells 2 tablespoons extra virgin olive oil 1 cup store bought marinara sauce 1/3 cup Parmesan, grated filling: 2 cups frozen spinach, thawed, drained and chopped 2 cups part-skim ricotta 1 egg, lightly beaten 1 shallot, minced (I used an onion) Added 3 cloves of garlic 1 tablespoon thyme, minced (didn't use) salt and pepper to taste Directions: 1. Preheat oven to 350°F. 2. Bring a large pot of water to a boil. 3. Add the pasta, as well as a generous amount of salt, and stir. 4. Cook the pasta until al dente, about 15 minutes. 5. Drain the pasta and toss with olive oil. Set aside. 6. Pour the marinara sauce into a 8”x 8” baking dish and move around to form an even coat. 7. These are dreamy and easy. The dreamy part? I had all of the ingredients in my house! This recipe almost didn't happen, as I never make recipes with less than 4 stars-but this was worth it. took it to work and it got gobbled up. Simply, my new favorite cake. I could eat this here or there, I could eat this anywhere! We ate this warm and it is simply delightful! Thanks to Allrecipes for a great recipe ! Ingredients 2 cups all-purpose flour 2 eggs 2 cups white sugar 1 teaspoon baking soda 1 teaspoon vanilla extract 1 cup butter 1 1/2 cups miniature marshmallows 3 tablespoons unsweetened cocoa powder 1 cup cola-flavored carbonated beverage 1/2 cup buttermilk 1/2 cup butter 2 tablespoons unsweetened cocoa powder 6 tablespoons cola-flavored carbonated beverage 4 cups confectioners' sugar 1 cup chopped pecans Directions Combine flour and white sugar in mixing bowl. Heat 1 cup butter, 3 tablespoons cocoa, and 1 cup cola soft drink to boiling and pour over the flour and sugar. Mix thoroughly. Black Bean burritos

We have really been on a mexican food kick lately. We have mexican at least twice a week, and the only downside is that Cayleigh isn't a huge fan, though she will eat quesadillas and now randomly has a new love for salsa. Lord, don't ask her to eat a chicken fajita, the world may end. Tonight's dinner was Black Bean burritos. I used this recipe as a base for my burritos, but did change it up a bit. Here is what I used, I will put in bold the changes I made: 2 (10 inch) flour tortillas (I used 4) 2 tablespoons vegetable oil (I only used 1/2, and used mostly pam) 1 small onion, chopped (I used a purple onion) 1/2 red bell pepper, chopped 1 teaspoon minced garlic 1 (15 ounce) can black beans, rinsed and drained 1 teaspoon minced jalapeno peppers (I used fresh) 3 ounces cream cheese (I used half a block) 1/2 teaspoon salt 2 tablespoons chopped fresh cilantro I added a half a piece of chicken breast-it goes so much farther with beans Also added a handful of cut up fresh cher...

Super easy ice cream made by Cayleigh

I'm always looking for recipes that Cayleigh can make by herself mostly. Once she starts on a cooking projects it's "mommy, I need to do that" and "mommy, I want to do it by myself". One look at the sense of accomplishment she is bursting with makes the mess worth it. This may be the absolute easiest thing we've ever made though and you can pretend it's made with "fat free heavy cream" and "calorie free candy bars" if you really want to ;) The one nice thing is that it's so rich, you really only need one small scoop....ish. From the NY Times : Time: 15 minutes, plus cooling 1 cup cold heavy cream 1 teaspoon pure vanilla extract 1 (14-ounce) can cold sweetened condensed milk. 1. In a mixer, whip heavy cream just until it begins to thicken. Add vanilla and whip until soft peaks form. With mixer running, slowly pour in condensed milk and whip until high peaks form. 2. BBQ Chicken quesadilla

or more appropriately known as leftovers I had in my fridge, either name works. Why does a dinner that tastes so good when you make it one night, look so blah in your tupperware container as a leftover?? I'm really building this to make you wanna try it right??? Well it was scrumptious!! I made these tonight and was so inspired, decided to blog about it! Believe me, nobody was more surprised than me ;) Here is what I threw together: Ingredients: tortilla shells Leftover cooked chicken cut up BBQ sauce tomatoes onion fresh pineapple cut up cheddar cheese Saute onion and pineapple. Throw all ingredients onto tortilla shell and cook in pan. Once cooked, take the top of tortilla shell off and throw on some BBQ sauce! SO GOOD!! There is something about the saltiness of the chicken and cheese paired with the sweetness of the BBQ sauce and pineapple that goes so well together. I have a couple more food blogs up my sleeve, stay tuned!

The best Ranch dressing

I just stumbled across this recipe online recently, and WHOA is it awesome! I'm a ranch girl and nothing is better than the stuff you get at steakhouses, but this is even better! PS-yes mom, I know it is AWFUL for you, but at least it has alot less ingredients than the stuff in the dressing aisle! 1 tablespoon hidden valley ranch dressing mix (buttermilk recipe) 1 cup mayonnaise 1/2 cup buttermilk 1/4 teaspoon fresh coarse ground black pepper 1/8 teaspoon paprika 1/8 teaspoon garlic powder 1 Combine above ingredients in a medium bowl, mix well. 2 Cover and chill for at least 30 minutes prior to serving I love that you can thin it out and it isn't SO thick like the store bought stuff.
