Making muffins....

I love to bake, not clean, just bake! I made blueberry muffins the other day and Cayleigh really wanted to help so we made them together! She did good until it was time for me to put them in the oven, she just wanted to stir it to death!!

Didn't get time to post, but Wednesday was a rainy day and I don't usually like to take her out, but I needed to fill a prescription so we braved the water! She looks so darn cute in her rain boots!

Finally to catch up from my few days of not posting, yesterday we decided to hang out with my mom while she made 100 returns at the stores and then go to her house and hang out with the girls...I know I already did a post about this, but my sisters are growing up at an alarming rate! Anyway, we had a good time, with the exception of me having an allgeric reaction to something and my eyelid swelling and looking like I had a blister on it, yuck!

10 is...

I decided to pop back into my blog and reminisce, and boy is it sad. All of my pictures are gone, thanks to a company wanting $400 to publish them. At least I have my words...On that note, I thought I'd write a bit of what 10 looks like: -Eating a bowl of cereal and a pop tart EVERY morning -Really starting to cooking unassisted. Black Bean burritos

We have really been on a mexican food kick lately. We have mexican at least twice a week, and the only downside is that Cayleigh isn't a huge fan, though she will eat quesadillas and now randomly has a new love for salsa. Lord, don't ask her to eat a chicken fajita, the world may end. Tonight's dinner was Black Bean burritos. I used this recipe as a base for my burritos, but did change it up a bit. Here is what I used, I will put in bold the changes I made: 2 (10 inch) flour tortillas (I used 4) 2 tablespoons vegetable oil (I only used 1/2, and used mostly pam) 1 small onion, chopped (I used a purple onion) 1/2 red bell pepper, chopped 1 teaspoon minced garlic 1 (15 ounce) can black beans, rinsed and drained 1 teaspoon minced jalapeno peppers (I used fresh) 3 ounces cream cheese (I used half a block) 1/2 teaspoon salt 2 tablespoons chopped fresh cilantro I added a half a piece of chicken breast-it goes so much farther with beans Also added a handful of cut up fresh cher...

And the verdict is.....

Sinus Infection. I went to the doctor's today after work and he said I had a pretty bad sinus infection. In my experience, it is definitely my worst one of my life. My head hurts, my eyes are super red and irritated from the sneezing and blowing my nose a thousand times a day. Oh and my throat is scratchy and my ears are aching. I hate being sick. I hate going to the doctor's. I hate taking medicine, particularly medicine with no coating on it that are the size of my pinky finger. It is still raining, with no real end in sight. Hmm...anything else I can complain about? I want to keep it all in this post and just get it all out now so I can get over it! Well there was the fact that my doctor prescribed me eye drops and when I went to pick them up, it was $50!!! Forget it, I will suffer. I will take my $7 generic antibiotic and suffer with red, sore eyes. Ok, enough for today. I promise to be brighter when I am feeling better.
