Mmmm....Cake!
Just made a banana cake with cream cheese icing. It wasn't a pretty cake, fell a bit, but taste GREAT! An easy recipe that taste very rich in flavor!


So here's the recipe. I added 1/2c sour cream and 1 tsp cinnamon to it and it did come out looking a bit flat, but it tastes AWESOME and with icing you can't even tell!
1 (18.25 ounce) package yellow cake mix
2 very ripe bananas, mashed
1 teaspoon baking soda
DIRECTIONSPrepare yellow cake mix according to package directions. Mash the bananas with the baking soda and stir into the cake mix batter. Pour batter into one greased and floured 9x13 inch baking pan. Do not preheat oven. Place uncooked cake in oven and turn oven on to 350 degrees F (175 degrees C). Bake for 1 hour. Let cake cool thoroughly and then refrigerate.
Cream cheese Icing:
1/2 cup butter, softened
1 (8 ounce) package cream cheese, softened
3 1/2 cups confectioners' sugar
1 teaspoon vanilla extract
In a large bowl, cream 1/2 cup butter and cream cheese until smooth. Beat in 1 teaspoon vanilla. Add confectioners sugar and beat on low speed until combined, then on high until frosting is smooth. Spread on cooled cake.
