first letter....

Cayleigh is learning to write, and fast! I will say when I decided to spell her name the way I did, it never dawned on me that I would be the one teaching her to spell her name! When I was teaching her the names ann, pam, and kim all sounded like BIG candidates for future children! Nevertheless, similar to talking, once she started to figure it out, she has taken off. Her letters aren't "pretty" to some eyes, but to me it's perfect. <3 When we were working on this, I had no clue she knew how to write half of the letters that she did. 'v' and 'd' were the only ones she didn't know. She has come a long way considering that about 6 weeks ago she couldn't write more than 'C' and 'A' and didn't recognize any lower case letters. Now she recognizes all letters, and can spell her name without help, and apparently write a letter if you spell words! :) We gave her the choice of who to write a letter to, and she chose her great grandparents-Little Ma and Poppy-as if my heart didn't love that kid with all my being before, she found a way to stretch it.

I decided to pop back into my blog and reminisce, and boy is it sad. All of my pictures are gone, thanks to a company wanting $400 to publish them. Black Bean burritos

We have really been on a mexican food kick lately. We have mexican at least twice a week, and the only downside is that Cayleigh isn't a huge fan, though she will eat quesadillas and now randomly has a new love for salsa. Lord, don't ask her to eat a chicken fajita, the world may end. Tonight's dinner was Black Bean burritos. I used this recipe as a base for my burritos, but did change it up a bit. Here is what I used, I will put in bold the changes I made: 2 (10 inch) flour tortillas (I used 4) 2 tablespoons vegetable oil (I only used 1/2, and used mostly pam) 1 small onion, chopped (I used a purple onion) 1/2 red bell pepper, chopped 1 teaspoon minced garlic 1 (15 ounce) can black beans, rinsed and drained 1 teaspoon minced jalapeno peppers (I used fresh) 3 ounces cream cheese (I used half a block) 1/2 teaspoon salt 2 tablespoons chopped fresh cilantro I added a half a piece of chicken breast-it goes so much farther with beans Also added a handful of cut up fresh cher...

And the verdict is.....

Sinus Infection. I went to the doctor's today after work and he said I had a pretty bad sinus infection. In my experience, it is definitely my worst one of my life. My head hurts, my eyes are super red and irritated from the sneezing and blowing my nose a thousand times a day. Oh and my throat is scratchy and my ears are aching. I hate being sick. I hate going to the doctor's. I hate taking medicine, particularly medicine with no coating on it that are the size of my pinky finger. It is still raining, with no real end in sight. Hmm...anything else I can complain about? I want to keep it all in this post and just get it all out now so I can get over it! Well there was the fact that my doctor prescribed me eye drops and when I went to pick them up, it was $50!!! Forget it, I will suffer. I will take my $7 generic antibiotic and suffer with red, sore eyes. Ok, enough for today. I promise to be brighter when I am feeling better.
