500!!!!!!!!!!!!!!!!!!

I CANNOT believe I made it to  500 posts. Took 4 years, but it's kind of a big deal. At least to me, who some days would rather throw this computer than blog on it. My battery died on the laptop so in order to blog I have to sit in a room by myself, which usually loses out to sitting with Matt and/or Cayleigh. I haven't been taking pictures much, with it being so cold so hopefully I'll pick this blog up with more frequency when it warms up some. A big thank you to those who have taken the time to stop by the last four and a half years. While I write this blog for myself, it's everyone else who helps remind me why I am doing it!

My inspiration for this whole blog goes to this curly girl. :)

I decided to pop back into my blog and reminisce, and boy is it sad. All of my pictures are gone, thanks to a company wanting $400 to publish them. At least I have my words...On that note, I thought I'd write a bit of what 10 looks like: -Eating a bowl of cereal and a pop tart EVERY morning -Really starting to cooking unassisted. Black Bean burritos

We have really been on a mexican food kick lately. We have mexican at least twice a week, and the only downside is that Cayleigh isn't a huge fan, though she will eat quesadillas and now randomly has a new love for salsa. Lord, don't ask her to eat a chicken fajita, the world may end. Tonight's dinner was Black Bean burritos. I used this recipe as a base for my burritos, but did change it up a bit. Here is what I used, I will put in bold the changes I made: 2 (10 inch) flour tortillas (I used 4) 2 tablespoons vegetable oil (I only used 1/2, and used mostly pam) 1 small onion, chopped (I used a purple onion) 1/2 red bell pepper, chopped 1 teaspoon minced garlic 1 (15 ounce) can black beans, rinsed and drained 1 teaspoon minced jalapeno peppers (I used fresh) 3 ounces cream cheese (I used half a block) 1/2 teaspoon salt 2 tablespoons chopped fresh cilantro I added a half a piece of chicken breast-it goes so much farther with beans Also added a handful of cut up fresh cher...

And the verdict is.....

Sinus Infection. I went to the doctor's today after work and he said I had a pretty bad sinus infection. In my experience, it is definitely my worst one of my life. My head hurts, my eyes are super red and irritated from the sneezing and blowing my nose a thousand times a day. Oh and my throat is scratchy and my ears are aching. I hate being sick. I hate going to the doctor's. I hate taking medicine, particularly medicine with no coating on it that are the size of my pinky finger. It is still raining, with no real end in sight. Hmm...anything else I can complain about? I want to keep it all in this post and just get it all out now so I can get over it! Well there was the fact that my doctor prescribed me eye drops and when I went to pick them up, it was $50!!! Forget it, I will suffer. I will take my $7 generic antibiotic and suffer with red, sore eyes. Ok, enough for today. I promise to be brighter when I am feeling better.
